We are seeking an innovative and skilled Head Chef to join our team aboard a daily 5-hour
casino cruise. The ideal candidate will possess creativity, leadership, and an exceptional ability to prepare,
cook and execute quality dishes in a fast-paced environment. This position also involves designing daily
specials, planning menus for VIP and special themed events, overseeing large group catering, managing
inventory, and training kitchen staff to ensure a seamless dining experience for guests.

Key Responsibilities:
1. Daily Specials and Menu Planning:
- Develop and implement daily specials based on guest preferences and ongoing or seasonal trends.
- Ensure the menu is always fresh, exciting, and appealing to a diverse clientele.
- Maintain consistency in the presentation and taste of all dishes.
- Prepare, cook and execute quality dishes in a fast-paced environment.
2. VIP and Special Event Planning:
- Curate and execute exclusive VIP events, ensuring an exceptional dining experience.
- Design and oversee special themed events, working with the event coordinator to ensure a cohesive experience (e.g., holiday events, seasonal themes, or casino promotions).
- Plan and execute menus for large groups, including buffet-style and plated options, catering to various dietary needs.
3. Staff Management and Training:
- Lead, mentor, and train kitchen staff to maintain high standards of food quality, safety, and cleanliness.
- Ensure all staff members are knowledgeable about menu offerings and kitchen operations.
- Monitor staff performance, providing constructive feedback and fostering a positive, collaborative work environment.
4. Food Ordering and Inventory Management:
- Order and manage food supplies to maintain inventory levels while minimizing waste.
- Work with suppliers to ensure the quality and timely delivery of ingredients.
- Track inventory and keep detailed records of orders, usage, and stock levels.
5. Quality Control and Food Safety:
- Ensure all dishes are prepared and served in accordance with food safety regulations and
company standards.
- Maintain cleanliness and organization in the kitchen and food prep areas at all times.
- Perform regular kitchen inspections to ensure the proper functioning of equipment and
the cleanliness of the environment.
6. Customer Interaction and Satisfaction:
- Interact with guests to ensure they have a memorable dining experience and address any
special requests or dietary needs.
- Handle guest feedback professionally, taking action to resolve any issues and enhance the
overall experience.
Requirements:
- 5 + years proven experience as a Head Chef, preferably in a high-volume or cruise setting.
- 5 + years proven experience in Culinary Management
- Ability to create innovative menus and design special events.
- Excellent leadership, communication, and team-building skills.
- Ability to thrive in a fast-paced, high-pressure environment.
- A passion for customer service and culinary excellence.
- Food safety certification and experience with inventory control.
- Availability to work flexible hours, including evenings, weekends, and holidays.
