Job Overview


With 10 restaurants and food service outlets situated across our breathtaking grounds, Callaway Resort & Gardens offers something for every taste...from casual and creative pub food, to elegant dishes that feature fresh and regionally sourced foods. Callaway is currently seeking a Resort Executive Chef to lead our talented team of culinarians in providing a feast for the senses!





The Resort Executive Chef will establish a congenial and professional relationship with other departments to ensure consistency in all outlets and guarantee that all guest food experiences are "Best in Class".




The Resort Executive Chef will be responsible for selecting, perfecting and most importantly leading the team at each of the outlets and will oversee all related culinary activities. In addition, the Resort Executive Chef will have a keen financial sense and keep tight supervision over controllable costs by forecasting consumption, minimizing waste, labor and expenses and overseeing all food related P&Ls.




The Resort Executive Chef will oversee all restaurants, concessions outlets & high volume catering events and will be integral in executing day to day operations and all signature events and festivals occurring at Callaway Resort & Gardens.




Responsibilities and Duties



  • Adept at training, mentoring and leading all culinary staff

  • Driving a positive culture within the team

  • Developing creative, seasonal menus/recipes for all areas

  • Costing and pricing menus

  • Standardizing production recipes to ensure consistent quality

  • Establishing presentation technique and quality standards

  • Ensuring proper equipment operation/maintenance

  • Ensuring proper safety and sanitation in kitchen

  • Maintaining and building upon a 4 Diamond F&B operation


Qualifications



  • Minimum 5 years' experience in a senior culinary leadership role.

  • Must have multi-unit management experience.

  • Strong verbal and written communication skills.

  • Must be flexible with working on weekends and holidays.

  • This position's responsibility spans over multiple venues and outlets.


  • Must be able to lift or move at least 25lbs regularly. Must be able to work in any weather condition. Must be able to stand for long periods of time.
