Position Overview

The Sous Chef is responsible for the day-to-day culinary operations for our in-house micromarkets; including, but not limited to, recipe creation, maintenance of quality standards, and supervising storage, stocking, and sanitation procedures. The team is responsible for production and distribution of fresh pack food items. This position will oversee, mentor, and develop a team of culinary professionals.

Essential Duties

Include but are not limited to the following:

  • Follow Exact Sciences standards for food quality, preparation, recipes, and presentation.
  • Provide the highest quality of service at all times.
  • Assist with updates, changes, and additions to recipe file.
  • Ensure stations are stocked and set up correctly.
  • Assign and complete required prep work a day in advance.
  • Assist team members with prep work and cleaning responsibilities, as needed.
  • Review production sheets as a planning tool for purchasing.
  • Work with Site Chef on ordering all food and supplies.
  • Supervise and inspect all preparation and cooking equipment on a regular basis to ensure that they are kept clean, sanitary, and in perfect operating order.
  • Comply with sanitation/safety standards within Food services and ensure all personnel follow safety/sanitation standards.
  • Keep team promptly and fully informed of all problems or unusual matters. Take prompt corrective action when necessary or suggest alternative course of action.
  • Supervise staff; including, but not limited to, organize and prioritize work, write/conduct performance reviews, train/develop, and manage work performance.
  • Communicate goals clearly to employees to ensure understanding and success in achieving them.
  • Motivate and inspire employees to do their best work through coaching.
  • Maintain morale and support employee engagement initiatives.
  • Ensure food products and presentation are of the highest quality and are prepared to serve in a timely manner.
  • Ensure proper rotation of all products and stock product to par level.
  • Work with leadership to ensure best use of inventory and leftovers to achieve budgeted food cost.
  • Review inventory levels and report to leadership.

  • Ability to grasp with both hands; pinch with thumb and forefinger; turn with hand/arm; reach above shoulder height.
  • Ability to work on a computer and phone simultaneously.
  • Ability to comply with any applicable personal protective equipment requirements.
  • Ability and means to travel between Madison locations.
  • Ability to travel 5% of working time away from work location, may include overnight/weekend travel.

Minimum Qualifications

  • Culinary Arts Degree; or Bachelor’s degree in food service, hospitality management, or related field; or high school degree/general education diploma and 4 years of relevant experience in lieu of Bachelor’s degree.
  • 3+ years of experience working in food service management, hospitality management, or related field.
  • 1+ years of leadership experience leading a diverse team of food service professionals.
  • Must hold Serve Safe certification at time of hire or ability to obtain within 90 days of hire.
  • Basic computer skills to include Internet navigation, Email usage, and word processing.
  • Proficient in Microsoft Office.
  • Demonstrated ability to perform the Essential Duties of the position with or without accommodation.
  • Authorization to work in the United States without sponsorship.

Salary Range:

$50,000.00 - $81,000.00

 

The annual base salary shown is for this position located in US - WI - Madison on a full-time basis. In addition, this position is bonus eligible, and is eligible to receive company stock upon hire as well as annually.
