The Lead Cook is a key member of the dining team tasked with providing nutritious high-quality food to support a truly great dining experience is when our guest's needs are anticipated and met for them, resulting in a very high degree of satisfaction. 

 

We are looking for a Lead Cook to become a key member of the dining team tasked with providing nutritious high-quality food to support a truly great dining experience for our residents.  

 

Duties and Responsibilities:

  • Oversee & assist breakfast, lunch, and dinner production and service to ensure quality meal production, presentation, and production
  • Prepare daily meal offerings as outlined on menus utilize standardized recipes. Coordinate meal prep for following day. Alters or adapts recipes to accommodate special dietary needs of residents or to improve recipes.
  • Coordinates, participates, and leads the serving food.  Monitors portion control to meet residents’ requests and minimize waste. Ensure daily meals are ready at the specified times to ensure meal service isn’t delayed. Maintain and record assigned food or equipment temperatures daily.
  • Assists with menu planning; reviews and adjusts menus with Dining Service Director.
  • to accommodate foods in season, vendor sale prices, special events and holidays.  Assists in identifying food and supplies needed for the next week’s menus and reports to the Dining Service Director.  Prepares meats for storage and portion control upon delivery; ensures proper storage of all delivered foods and ingredient
  • Maintains a clean, orderly, safe, and sanitary kitchen environment.  Ensures the dietary team is displaying proper handling, labeling and storage of food for infection control. Ensures cleaning of food service equipment as well as other assigned cleaning duties per posted department cleaning schedule. Oversees and ensures opening and closing duties are completed by dining associates.
  •  Assist and leads training of other kitchen staff in food preparation. Attend and participate at department meetings and all staff in-services.
  •  Know and adhere to all company, state, local, and county health department regulations. Participates in all survey inspections. Reviews and assist with the develop a plan of correction for dining services findings noted during survey inspections.
  •  Notify Director of Dining of malfunction of equipment or appliances. 
  •  Serves as department supervisor in the absence of the Director of Dining.

Qualifications

  • High School diploma or GED
  • Some college or culinary school experience preferred
  • Residential/Commercial cooking experience
  • One to three years cooking experience in a geriatric environment.
