Description and Qualifications

This position manages the purchasing and accounting for food and equipment inventory. Primarily Administrative, while also assisting with daily restaurant operations including food prep, organization, and expediting service. Flexible AM/PM Schedule.


ESSENTIAL DUTIES AND RESPONSIBILITIES include the following. Other duties may be assigned.



  • Processing invoices for multiple restaurants

  • Managing and monitoring budgets for multiple restaurants

  • Creating the Bi-monthly budget analysis report

  • Filing Credit Card receipts

  • Submitting Expense Reports

  • Submitting Purchase Orders

  • Purchasing food and equipment items, inside of budgets outlined

  • Sourcing ingredients

  • Communication and resolution with vendors/purveyors

  • Organizing equipment and food

  • Performing monthly inventory

  • Maintaining a clean office and kitchen workspace

  • Communicating with Accounting regarding budgets and purveyor payment

  • Assisting the chef and cook team with prep and service when needed

  • Receiving and putting away orders

  • Managing workload effectively and completing deadlines

  • Updating team with procedure and ingredient changes

  • Creating invoices for offsite events

  • Contacting for all maintenance issues for the kitchen

Must be able to work well with other Team Members, Managers and interact with our guests.

SUPERVISORY RESPONSIBILITIES



  • Primarily managing product and procedures, but must also be able to manage the line team in conjunction with the rest of the kitchen management team.


EXPERIENCE/EDUCATION



  • Experience managing budgets, including food cost

  • Familiar with Excel and inventory input software

  • High level of kitchen operations experience

  • Experience cooking in a high-level kitchen

  • Must be able to operate a computer and scanner/printer


LANGUAGE SKILLS



  • Must have excellent verbal and written communication skills

  • Must be able to communicate with all levels of Team Members and Guests in a professional and courteous manner

  • Must be able to effectively communicate budgets and procedures to management team

  • Must be able to read and understand recipes

  • Must be able to communicate with other cooks to ensure timely delivery of dishes to guests


MATHEMATICAL SKILLS



  • Understanding of Basic Math

  • Understanding of food cost percentages


REASONING ABILITY



  • Must be able to exercise judgment and make decisions based on job knowledge and awareness of company goals


PHYSICAL DEMANDS



  • Must be able lift up to 50lbs

  • Must be able to stand for a long period of time

  • Must be able to sit for a long period of time

  • Must be able to take inventory of products in cold and freezing walk-in coolers

  • Must be able to safely operate a company vehicle or golf cart

  • Professional kitchen on 5,200-acre property of Blackberry Mountain
