Sous Chef– Full Time
About Us:
SPIRE Institute & Academy (IA) is a comprehensive academic, athletic, personal skills and career development experience located within a world class event and wellness complex. Constructed on nearly 500 acres with more than 750,000 sq. ft. under roof, SPIRE (www.spireinstitute.org) encompasses four divisions: SPIRE Academy, an accredited college preparatory international boarding school and multi-sport/specialty training and development academy for 9-12 graders and a post grad program; SPIRE Institute, the research and development arm studying performance improvement across multiple disciplines; SPIRE Events, a facility and team that hosts local, national and international tournaments and events with the NCAA, the Big East, Big Ten and Atlantic 10 conferences, Olympic trials and world championship qualifiers; and SPIRE Fit, a community membership-based fitness, swim and health center open to the public. Sports currently featured on campus include swimming, track and field, basketball, esports, drone racing, wrestling and lacrosse.
Overview
The Sous chef reports directly to the executive chef, managing the entire operation in their absence and overseeing a wide range of tasks including supervising the kitchen staff and coordinating the timing of each meal. This type of chef plays a pivotal role in upholding the standards and quality of the food. Previous experience in a team environment and various cooking methods preferred.
Duties & Responsibilities:
- Menu and recipe development: Collaborating with the head chef to create, test, and refine recipes and menus
- Supervision: Overseeing the kitchen staff, delegating tasks, and ensuring dishes meet standards
- Cooking: Preparing dishes themselves and being familiar with each station in the kitchen
- Training: Training new staff members and managing the team
- Safety: Ensuring safety regulations are in place and monitoring sanitation practices
- Inventory: Keeping inventory lists and monitoring ingredient stocks
- Business operations: Working with the Food & Beverage Director and executive chef to set the direction of the business
Requirements:
- Able to work in a fast-paced environment
- Able to multitask, prioritize, and manage time efficiently
- Physical endurance to stand for an entire shift
- Self-motivated and self-directed
- Works well as part of a team and on individual tasks
- High school degree or equivalent
- Legally able to work in establishments which serve alcohol
- Able to work early mornings, nights, and weekends
- able to bend, move, and lift up to 25 pounds or more
- Physically able to stand and move during the length of shift; able to bend and kneel through shift; able to lift up to 25 pounds or more
- Must pass a background check
- Able to read and write
